The coffee we produce at Café Cafexlti comes from the Las Jacarandas farm, which in addition to being a coffee farm, constitutes a forest conservation project, an undertaking supporting the local work of the communities surrounding the farm and being a totally self-sustaining farm resulting in a 100% natural coffee, where nature plays a very important role in the development of the coffee as well as in its care and when providing the coffee plant with what it needs such as a regulated temperature, humidity, shade and soil nutrients.

Selection of the plant

We only select the best coffee seed for our nursery, thus achieving the highest quality coffee plant from the nursery. Each germinating plant goes through a rigorous quality control system, thus choosing only the plants with the best root, the best stem development and with the appropriate leaf size and plant coloring from the beginning, resulting in only the plants that meet these quality parameters being selected.

The optimal offspring

Once the coffee plant reaches the appropriate age to be transplanted into the field and has gone through the rigorous selection process, it is ready to become part of the production chain. Our coffee plantations are continually improved and renovated, introducing new plants and caring for the existing coffee plants with special practices such as pruning for renewal, fertilization with organic substrates produced on the farm itself with branches and leaves, as well as continuous monitoring by our specialists.

Natural growth

During the months in which the coffee is developing, its growth is continuously monitored, thus ensuring care during its growth and maturation. There is a natural cooling system that nature provides. This consists of developing the coffee fruit within a forest, alternating the coffee plants with trees, although the density of coffee plants is reduced, a micro ecosystem is created with its own microclimate that provides the regulated temperature, humidity, nutrients and shade suitable for the coffee.

The selection during harvesting

During the harvest season, only coffee beans that have reached optimal ripeness are collected for processing. Those beans that have not yet reached their ripeness are left for a longer period of time, waiting patiently until they are ripe enough to be harvested. In this way, a homogeneous product is achieved at the end of the harvest by carrying out the coffee harvest in a staggered and controlled manner. Only local labor is employed. In this way, in addition to providing local work, qualified labor with generations of experience in coffee harvesting is used.

The coffee is processed in a traditional way in micro-lots, where our specialists select the beans with the help of the most advanced technology, which greatly facilitates this extensive and delicate task. Once the coffee has been washed and fermented, with the help of African beds, it is left to rest and dry naturally until it reaches the optimum humidity level for further processing.
